Miso, soy sauce, mirin, vinegar. Every seasoning that holds up the Japanese table is born from the power of a tiny fungus called koji.
The long-established miso cellars of Kyoto, the fish sauce of Noto, the black vinegar of Kagoshima. The fermentation culture nurtured by the climate of the Japanese islands is among the most delicate and varied in the world.
